, The Chicken:

1 Chicken breast on the bone

Olive oil

I bottle Magner's Cider, (or equivalent)

1 stalk celery

1 sweet onion

4 cloves garlic

Handful fresh thyme, sage, bay leaf, oregano, parsley and any other fresh herb in your garden you like

1/2 lemon

Salt

Fresh ground black pepper

, The Sauce:

4 " length of Chorizo, (more or less to taste)

1 sweet onion

1 carrot

1/2 red pepper

2 cloves garlic

Yoghurt

Bunch Fresh Spinach

Big bunch fresh Basil

1 chile pepper

Salt

Fresh ground black pepper

Sauté the chicken in the olive oil until brown.

Add the cider and the other ingredients.

Simmer slowly over low heat for 1 hour.

Slice the Chorizo in half lengthwise and slice across into thin slices.

Cut the onion into half and cut into thin slices.

Heat a pan, add a small amount of olive oil and allow the onion to caramelise over low heat.
